Meal planning completely took a nose dive last week – as evidenced by my lack of post. You can also see how crazy of a week it was in my last post. So I was determined this weekend to at least make a meal plan list, and hope to stick to it. As I mentioned before, I generally meal plan for the next 7 days, but don’t necessarily cook the assigned meal for the day. I allow for flexibility and what the family is hungry for each day. Here is our meal plan for the week:
Monday – Shrimp Fried Rice (we made this last night and it was delicious! Every time we make this we say we should write down the recipe, but we’ve never done it before. Last night was no different – still no written recipe). Here’s a picture to show you how yummy it looks!
Tuesday – Marinated turkey breast tenderloins, green beans, roasted potatoes
Wednesday – While Bean Soup
Thursday – Mexican Cornbread Casserole (we make ours with ground chicken)
Friday – The Fridge (we are not eating from the refrigerator, it’s our favorite local craft beer place)
Saturday – Chicken Parmesan, broccoli or brussel sprouts, whole wheat couscous
Sunday – Breakfast
