Meal Planning – Revamped

I am ready to admit that the traditional meal planning has not been working for us.  We do well making a list of meals for the week and shopping for the items we need.  That’s not a problem.  Actually, we’re pretty good at that part.  The problem is that we only eat about half of the planned meals and the other half go out the window.  And sadly, we were throwing away some produce that we just didn’t use.

So, we have decided to revamp the way we meal plan and prep for the week.  We did a huge shopping trip this past weekend and stocked up on proteins, cheese, yogurt, fresh and frozen produce and fruit. Today I decided to prep a bunch of staples that we typically use every week.  You see, with a toddler your time in the kitchen in limited when it comes to meal times.  I hoped by having some basic foods prepared and ready for us in the refrigerator that we could save some time in the kitchen.  We also eat a lot of the same, or very similar, meals throughout the month.  Again, just for simplicity and quickness of preparation.

These are some things I prepped today:
-Basmati Rice
Gluten Free Pancakes
-Sauteed Mushrooms
-Caramelized Onions
-Hard Boiled Eggs
-Roasted Asparagus

Knowing the items that we can grab quickly, these are some of the meals we can easily put together for dinners this week.  Most of them just require us cooking up a protein (which would have been great if we did today, but it just didn’t happen.  You know, toddlers).
-Rice bowls with grilled chicken, avocado, black beans, tomato, onions, corn
-Bacon, tomato and avocado sandwiches or wraps
-Sweet Italian sausages with caramelized onions and asparagus
-Omelettes with sauteed mushrooms, cheese, caramelized onions, bacon and asparagus on the side
-Egg salad sandwiches and wraps with smoothies

Hoping this will work out better for our family and help us to reduce the time we are spending in the kitchen at dinner.  Sometimes we will just pair a meal with smoothies, frozen veggies, or applesauce. That works for our family at this stage in our lives and we are still continuing to eat healthy, well rounded meals.
